Clean and wash the lettuce and chop it into bite-sized pieces. Wash the strawberries, remove the roots and cut into thick slices. Drain the mandarin oranges and collect the juice. Cut the chicken breast slices into strips. Mix the herb mixture with 3 tablespoons of the juice, sunflower oil and mustard, mix with the salad ingredients. Roast the pine nuts in the pan without fat.
