For the dough, mix the flour, margarine, salt and water with the dough hook of the hand mixer. Roll out the dough thinly on a well-floured work surface and cut into squares.
For the filling, mix together the quark, egg, sugar and 2 tablespoons of cinnamon. Use a tablespoon to spread the filling in the middle of the square of the pastry. Fold the squares together to form triangles.
Put the pierogi in a saucepan of simmering salted water and cook for 15 minutes.
Melt butter to taste and pour over the pierogi. Serve dusted with cinnamon.
