Wash, peel and cut the root vegetables into large pieces. Blanch the beetroot in boiling water for approx. 5 minutes and drain in a sieve. Turn the root vegetables in a mixture of olive oil, honey and orange juice and place in an ovenproof dish. Season with salt and pepper and add the sprigs of thyme.
Bake the root vegetables in the oven for approx. 40 minutes at 190 degrees, until they are golden in color.
