Peel the chicken thighs and rub with olive oil. Then do not sprinkle with salt and cayenne pepper too timidly (it is still not spicy afterwards!). Now rub again with olive oil so that the spices combine with the oil.
Heat olive oil in a large casserole and fry the chicken legs on both sides.
Add the garlic cloves to the meat unpeeled and sprinkle the herbs of Provence on top.
Close the pot tightly (if necessary, place aluminum foil between the pot and the lid) and place in the oven preheated to 200 °. Cooking time between 50 minutes and 1 1/2 hours, depending on the size of the chicken legs.
Baguette goes well with it (push the garlic out of the cloves and spread it on the baguette!)
