First you peel the cucumbers, cut them in half lengthways and remove the seeds with a teaspoon. You cut the cucumbers into crescents.
Heat the butter in a saucepan and sweat the cucumbers in it. Dust the vegetables with flour, fill up with stock and cream and cook for 15 minutes while stirring.
In the meantime, cut the chives into rolls, add to the cucumber with the mustard and stir in. Season with salt, pepper and a pinch of sugar.
Finally, fry the sausages in hot oil until golden brown and serve them with the cucumbers. This goes well with mashed potatoes.
