Cut half an onion into fine strips and the spring onions into small pieces. Dice the rest of the onion.
Put oil in the pressure cooker and let it get hot.
Salt and pepper the roulades and brush with mustard. Cover with the bacon, onion strips and half of the spring onions, roll up, fix and fry well on all sides in a pressure cooker. Put the remaining onions and spring onions in the pot and sauté briefly.
Pour enough water over the roulades so that they are half covered, close the lid and simmer in the pressure cooker for at least 20 minutes. Then let the pressure cooker cool down slowly until it can be opened. Season the sauce to taste.
I served with zucchini strips and potato dumplings.
