Instructions

  1. Put the egg whites in a bowl and beat until creamy with an electric mixer. Add lemon juice. Gradually add the sifted powdered sugar and mix well.
  2. A good royal icing should have the consistency of toothpaste. Just add more lemon juice if the mixture is too thick.
  3. If the royal icing is not to be used immediately, always cover it with cling film!
  4. For further color combinations, distribute the royal icing in small bowls and mix with the desired color.
  5. Then apply the icing to the cookies or gingerbread with a small piping bag.
