Cook the potatoes with their peel until done and let cool down well. Then peel and grate. Add fresh parsley, nutmeg, salt and pepper and mix everything well.
For variant 1: Melt some butter in the raclette pan and add some of the potato mixture to the pan. Pour raclette cheese over it and place the pan in the raclette grill for a few minutes.
For variant 2: Put some of the potato mixture on the hot stone and brown well on both sides.
