Instructions

  1. Caramelize the sugar in a pan. Deglaze with balsamic vinegar and add the coriander. Halve the peeled, pitted pears and add to the pan. Cook for about 10 minutes, turning once.
  2. In the meantime, clean the rocket and spread it on plates. Briefly put the Gorgonzola in the freezer so that it can be better cut into cubes. Arrange half of the pear on each of the rocket and spread the gorgonzola cubes over the top.
  3. Reduce the sauce on a high flame until it has a creamy consistency and spread over the lettuce and pears.
