- Mix the milk, eggs and salt with a hand mixer. Add the flour slowly (while continuing to mix) so that no lumps form.
- Let the dough rest for about 10 minutes.
- Mix with a wooden spoon and bake in a hot pan with butter (approx. One ladle per blini, you have to vary a little depending on the pan size).
- Brush each blini individually with a little butter.
- The blini taste good with sugar or jam, as well as hearty with creme fraiche and salmon, caviar, etc.
