- Peel and chop the potatoes and cook in the meat stock. Then save the broth. Chop the onion into fine cubes.
- Strain the potatoes through a sieve and then stir in the onion.
- Now add the oil and Melfor and work everything into a smooth mass. Season the dressing with salt, pepper and parsley.
- If the dressing is too thick, tilt the meat stock until it has the desired consistency. However, it is a rather creamy dressing.
- Let the dressing cool down briefly and then pour over the salad.
- Also tastes very good with my Caramelized Spiced Nuts as a topping.
