Instructions

  1. First you squeeze the juice of 1 1/2 oranges into a tall mixing vessel, a few pieces of the flesh of the orange may end up in the juice. Now add the sunflower oil, the white balsamic vinegar and salt and pepper and whisk the whole thing with a blender for a few seconds until a foamy emulsion is formed. Season to taste and, if necessary, sweeten with the juice of the remaining half of the orange and whisk again, because the dressing should taste more sweet than sour. Drizzle generously over the salad with a tablespoon and serve immediately.
  2. All strong and dark types of salad go well with it, such as lollo rosso, rocket, lamb`s lettuce or baby spinach.
