Put 100 ml soy milk, 1 tablespoon lemon juice and 200 ml oil in a tall container and beat with a mixer for several minutes until a mayonnaise is formed.
Mix the mayo with 80 g of soy cream / soy cream, 2 tablespoons of vinegar, the remaining lemon juice, 2 tablespoons of sugar and 1 tablespoon of mustard. Season to taste with salt, pepper and mustard.
If the soy milk is unsweetened, more sugar can be added if necessary.
