Cut the shallots into rings and caramelize with a little sugar. Remove from pan and set aside. Cut the ravioli diagonally and fry in the same pan. Add the shallots again and let them get hot again.
Put the dressing in a ratio of 30:70 balsamic to oil in a tall, sealable cup. Season with salt, pepper and a pinch of sugar and shake well.
Mix the salad (and the other fresh ingredients to taste) in a bowl with the dressing and arrange on a plate. Arrange the fried Maultaschen on the salad and garnish with the shallots. Garnish with parmesan cheese.
