Peel the kohlrabi and apple and grate them in a bowl. Cut the cucumber, paprika, Chinese cabbage and celery into fine strips - even better, finely slice and mix everything.
For the dressing, whisk together the oil, lemon juice and vinegar and season well with sugar, salt and pepper. Add the dressing to the salad and mix. The salad tastes great the next day when you put it in the fridge.
