Wash the rocket and lettuce and cut into bite-sized pieces. Drain the lettuce and arrange on plates, spread the pepperberries and raspberries over the top.
Mix the rosemary with the pumpkin seeds and thyme and turn the goat cheese in it. Grill in the oven at a high temperature for about five minutes.
Mix the dressing ingredients together, spread over the salad and serve the warm goat cheese on top.
