Wash the samphire well under cold running water. Cook in a saucepan with plenty of boiling water for about 7 - 8 minutes. Then strain and rinse with cold water so that it retains its beautiful green color.
Mix the garlic, lemon and olive oil well in a bowl and pour over the samphire.
It is best to serve this salad cold in the refrigerator after a few hours.
Tip: You can also mix 1.5 tablespoons of yogurt and 1 pressed clove of garlic and pour over the samphire instead of the olive oil and lemon sauce.
