Instructions

  1. Heat the butter in a pan and fry the spring onions (pieces) until light brown, then add the mushroom slices. Pour in the wine and fish stock and let it reduce halfway.
  2. Salt and pepper the salmon and place in the sauce, let stand for about 10 minutes. Then keep the salmon warm and stir the creme fraiche into the sauce, let it boil down for a few minutes, season with salt and pepper and add the salmon again.
  3. Thinly slice the zucchini, then cut them back into strips. Bring salted water to the boil and blanch the zucchini strips.
  4. Place the salmon with sauce on the zucchini noodles.
