Instructions

  1. First preheat the oven to 200 ° C (top / bottom heat).
  2. Thaw the salmon, then wash it off, pat dry with kitchen paper and set aside (you can of course also use fresh salmon fillets instead).
  3. Then peel the garlic and cut into thin slices. Wash the cherry tomatoes and also cut them into slices.
  4. If frozen spinach is used, it must first be thawed. Wash fresh spinach and set aside.
  5. Tear off 2 pieces approx. 40 cm in size from a roll of parchment paper and place on top of each other. Brush the middle of the top paper the size of the salmon fillet with a little softened butter and garlic. Then place the salmon fillet on top. Salt and pepper the salmon and season with herbs if necessary. Then place the spinach leaves on top of the salmon and finally top with the tomato slices. If you like, you can add the remaining garlic. Add a little salt and the laugh is almost ready for the oven.
  6. In order for the salmon to get and keep its great aroma, the parchment paper has to be folded into a candy. To do this, you put the two horizontal ends on top of each other and roll the ends of the paper together on the right and left so that a kind of candy is created. If you like, you can still tie the ends with kitchen thread.
  7. Now the parcel can be put in the oven at 200 ° C on the baking sheet for about 12-15 minutes. That depends on the thickness of the fillet. If you make several packages, you can test how far the fish is on one of them. It should be done, but still glassy.
  8. The paper can discolour during baking, that`s not a problem (but it shouldn`t burn! So check it from time to time). Serve the packets closed, because the great aromas escape when you open them.
  9. I had mashed potatoes and leaf spinach with cherry tomatoes. But I can also imagine a nice salad and / or fried potatoes with it.
