Instructions

  1. Do not dice the wild salmon too small. Clean and halve snow peas, cut the spring onions into oblique pieces, wash the spinach and remove the stalk.
  2. Soak glass noodles in hot water for 2-3 minutes, then drain and cut into pieces with scissors.
  3. Bring the poultry stock and coconut milk with the curry paste, the grated lemon zest, 2 - 3 tablespoons of lemon juice, salt and sugar to the boil. First add snow peas and spring onions, 2 minutes later salmon, spinach and glass noodles. Don`t let it boil anymore.
  4. Season to taste and serve sprinkled with chopped coriander.
