Instructions

  1. Preheat the oven (electric stove: 200 C / convection: 175 C). Line a baking sheet with parchment paper and put in the oven.
  2. Mix in the flour, eggs, milk, salt and pepper until smooth, stir in the sparkling water. Remove the tray, grease the baking paper immediately, pour the dough on it and bake in the hot oven for about 12 minutes.
  3. Wash and cut the chives. Remove the pancake from the tray and let it cool down briefly. Mix the creme fraiche with the horseradish and coat the pancakes with it. Sprinkle with chives and top with the salmon. Roll up the pancake tightly from the long side using the baking paper and cut into approx. 8 slices.
  4. Serve with a little more creme fraiche and some chives.
  5. A fresh salad goes well with it.
