Instructions

  1. Cut the spring onion into fine rings. Cut the salmon into fine strips. Whisk the eggs well with a fork and season with salt and pepper. Melt the butter in a pan and sauté the onions briefly, add the eggs and salmon and let them set. Use the wooden spoon to keep pushing the egg mixture from the edge into the middle until the egg is cooked.
