Cut the salmon fillet into cubes approx. 2.5 - 3 cm thick. Rub the zest of the lemon into a bowl (only the yellow, definitely not the white, it`s bitter!). Squeeze the juice out of the lemon and mix with the peel. Add the honey and stir well too. Then stir in the olive oil spoon by spoon. Season to taste with salt and pepper. Finely chop the dill and stir in. The amounts can vary for lemon and honey. Please try it out and readjust if necessary.
Put the salmon pieces in the marinade, mix well and cover and marinate for at least 2 hours. After approx. 2 hours, remove the salmon pieces, place on kebab skewers and fry or grill for approx. 2-3 minutes on each side.
