Peel the salsify under running water and cut into 5 cm pieces. Put the apple cider vinegar in a large bowl, fill up with water and add the black salsify.
Peel and chop the ginger.
Beat the lemongrass until it pops and spread it on the bottom of the baking dish. Pour the black salsify over it.
Mix the ginger, sesame oil, peanut oil and sea salt and spread over the salsify. Put everything in the oven for 20 minutes.
