Clean and peel all the vegetables and turn them through the meat grinder. Then add 500g of salt. Stir everything well.
Then put a tea towel over it, put it in a cool and dark place (cellar or refrigerator) and leave it alone for 48 hours. Then stir vigorously and fill into screw-top jars.
If it is then stored in a cool and dark place, it can be kept for a few months and is a great seasoning for soups, sauces, stir-fries and much more. With vegetables you can change the ingredients depending on your taste.
