Instructions

  1. Remove the stalks of the chillies, coarsely chop the pods, bring to the boil with the water. Cover and simmer over low heat for 15 months. Put the chillies in a blender with salt, sugar, vinegar and oil and puree to a paste. Pour the paste into a glass and store in the refrigerator.
