Mix two parts flour with one part water. Add oil, salt, yeast, sugar, stir with a spoon – and you should get a liquid mass, you can’t even call it a dough. Cover the bowl with cling film and leave warm for 4 hours.
Transfer the dough to a work surface with a lot of flour, sprinkle the dough on top with flour and mix the flour into the dough, bending the edges to the center. We give the dough as much flour as it takes, so that it can be picked up for further work, and no more.
Form two baguettes, folding the edges inward. Transfer to parchment sprinkled with flour. Sprinkle the baguettes with flour, cover with a deep bowl, and let rise for about an hour.
