Peel and finely dice the shallots, quarter, core and dice the tomatoes, cut the spring onions into rings.
Sweat the shallot cubes in the butter, add the tomato cubes and spring onions and heat everything briefly, season with salt, pepper and a little sambal oelek. Finally add the goat soft cheese and stir until it has combined with the other ingredients. Allow to cool slightly.
Spread the mixture on 2 wholemeal sandwich slices. If liquid has settled, it can also be put on the toast slices, so the whole thing will be even juicier. Cover with the other two toast slices and brown in the sandwich maker for 5 minutes.
