- Mix the ham, pickles, eggs, onion and chives in a bowl by hand.
- Add the mayonnaise, creme fraiche, salt and pepper and continue to mix well. Maybe a little more seasoning.
- Then put the whole mass in a cool place for about an hour, then it will be a little firmer.
- Spread the mixture on slices of toast, decorate as desired.
- If desired, the mixture can be thinned with 2-3 tablespoons of cream and used as a dip.
