Finely grate the cheese. Sift the flour on a baking board. Press an indentation in the middle. Beat an egg in it. Put the fat on the edge in flakes and sprinkle the salt over it. First chop all the dough ingredients briefly with a large knife, then knead with your hands to form a smooth dough. Cover and chill in the refrigerator for 30 minutes.
Roll out the dough about ½ cm thick on a lightly floured surface. Use a cutter (approx. 4 cm diameter) to cut out 40 round cookies and place them on a baking sheet lined with baking paper.
Whisk the second egg with a fork. Brush the cheese biscuits with the egg and sprinkle half of each with either caraway or poppy seeds.
Bake in a preheated oven (electric stove: 200 ° C, gas stove: level 3) for about 10 minutes. Remove the cheese biscuits from the tray and let them cool down.
