Mix the first 6 ingredients in a bowl with the mixer until the dough is nice and smooth.
Heat the olive oil in the pan and add an amount of batter appropriate to the size of the pan to the hot pan. Immediately distribute a handful of diced paprika and the sausage slices on top. Lightly press. Drizzle a little dough on top and sprinkle with the freshly grated parmesan. When the bottom of the pancake is nicely browned, turn it over.
The pancake is ready when the second side has also turned a golden brown color. Now salt and pepper.
A mixed salad goes well with it. You can vary the pancakes by e.g., mushrooms or zucchini are used.
