Scallop Ceviche Instructions

  1. Rinse your scallops under running water and put them in boiling water for a few seconds.
  2. Leave the scallops to dry.
  3. Chop the onions finely.
  4. Cut the sweet pepper into cubes.
  5. Remove seeds from hot pepper, chop finely.
  6. Mix scallops with onions, sweet and hot peppers, add vinegar, mustard, olive oil, and citrus juice.
  7. Mix everything well.
  8. Salt, pepper and add pre-chopped onion and cilantro.
  9. Pickle salad in the refrigerator for 24 hours.
  10. Place the ceviche over the lettuce before serving.
