Scallop Ceviche Instructions

  1. We wash the scallops under running water and put them in boiling water for a few seconds. Dry the scallops.
  2. Chop the onion.
  3. Cut the sweet pepper into cubes.
  4. Gently remove seeds from hot pepper and grind.
  5. Mix scallops with onions, sweet and hot peppers, add vinegar, mustard, olive oil, and juice of lemons and limes. We mix everything.
  6. Salt, pepper and add chopped onion and cilantro.
  7. Leave to marinate in the refrigerator for a day.
  8. Spread the ceviche on the leaves of your favorite salad and serve.
