Ingredients
- 12 scallop (s)
- 2 cloves garlic, finely chopped
- 2 chilli pepper (s), red, diced
- 5 tablespoon olive oil
- 500 g cherry tomato (s), halved
- 2 onion (s), red, cut into fine strips
- 1 mango (s), pulp, diced approx. .5cm in size
- 3 tablespoon lime juice
- 1 tablespoon maple syrup, alternatively: honey
- salt
- pepper
- 4 stalks chervil, cut
Instructions
- Mix the mussel meat with chopped garlic, 2 tablespoons of olive oil and chilli in a bowl and leave to stand in a cool place for 2 hours.
- In the meantime, mix the tomato halves, onion slices and mango cubes.
- Whip up the lime juice, remaining oil, maple syrup / honey, salt, pepper and chervil and mix with the salad.
- Remove the mussels from the oil and fry them in a grill pan for 1 minute on each side; salt + pepper and serve with the salad.
