Boil the potatoes in water for about 30 minutes, then drain, rinse and peel. Cut into slices or cubes and fry in a large non-stick pan with a little butter or coconut oil. Add the onions cut into rings or cubes and the nutmeg. It is best to always add a little in the pan so that the potatoes get a nice crust. Finally season with salt and pepper.
In the meantime, wash off the schnitzel and pat a little flat.
Put the egg yolks in a bowl. Add salt and pepper and stir with a fork. Chop up the corn flakes and transfer to another bowl.
Turn the schnitzel in the egg yolk. Go on to the cornflakes and turn the schnitzel in it too. Fry the breaded schnitzel in a coated pan with a little butter or coconut oil until golden brown.
