Separate the smoked pork from the bone and cut into small cubes. Fry the potato noodles in the pan and then set aside. Fry the Kassler. Wash and halve the rocket and tomatoes and cut the mozzarella into small pieces.
Then serve. First distribute the rocket on the plates, put some potato noodles on top, pour the pork loin over it and round off with the mozzarella and tomatoes. Then, depending on your taste, season with a little salt and pepper. However, due to the mostly salty Kassel, there is no need to add seasoning. At the end, drizzle the balsamic cream over it.
