Instructions

  1. First fry the breakfast ham in butter and olive oil over medium heat until crispy and place on an extra plate. Please note that the ham still pulls in a bit or becomes crispy after it has been removed.
  2. Then fry the pumpkin diced or cut into flat pieces over medium heat for about 5 - 8 minutes in the same pan, do not pour away the fat from the ham. Finally, add the eggs and cheddar and slowly fry into a scrambled egg of the desired consistency.
  3. The pumpkin pieces remain quite stable and do not disintegrate. Season to taste and add the herbs, freshly chopped or from the mill. Arrange on the plate and garnish with the ham strips.
