Instructions

  1. Whisk the eggs with the cream, salt and pepper. Melt the butter in the pan and let the egg freeze over a low heat, stirring constantly, until it has the desired consistency.
  2. Cut the smoked salmon into fine strips and divide between 6 glasses. Spread the cooled scrambled cream evenly on top. Put the salmon caviar on top as the last layer and garnish with chives.
