Finely dice the onion, cut the bread into 1 x 1 cm cubes. Heat the oil and fry both in a pan until the bread is brown and crispy and the onions are translucent.
Meanwhile, clean the pepper, first cut into slices, then into cubes. Put in the pan and fry briefly.
Whisk the eggs, season with salt, pepper and possibly herbs. Pour over the remaining ingredients in the pan. Dice the sheep`s cheese or crumble it with your hands and sprinkle it over the eggs. Let the eggs set to the desired cooking point, stirring occasionally.
