Instructions

  1. Rinse the asparagus, pat dry. Peel the lower third, cut off the woody ends. Cut the asparagus diagonally into thin slices, leaving the heads whole.
  2. Whisk the eggs with the milk, add the parmesan and chives, and season with salt and pepper.
  3. Heat the butter in a pan, cook the asparagus slices over a low heat for about 6 minutes. Add the ham cubes, pour over the egg milk and let set while stirring.
  4. The scrambled asparagus eggs are served on a sandwich (preferably strong wholemeal bread).
