Instructions

  1. Beat eggs in a bowl; salt & pepper, pour in some mineral water and beat with the blender.
  2. Cut the carrot into small sticks and fry in a pan with a little olive oil. Add the beaten eggs to the pan and stir well occasionally. Add the spring onions, cut into rings, stir and turn off the heat.
  3. Arrange the finished scrambled eggs on plates and sprinkle with chives or cress; serve immediately.
