Instructions

  1. Peel the eggplant and cut into small pieces. Fry the onions in clarified butter until golden brown. Add eggplant and crushed garlic. Fry for 10 minutes over medium heat.
  2. Whisk the eggs with salt and pepper, pour over the aubergines and let them set slightly while stirring constantly.
