Instructions

  1. Quarter the tomatoes and remove / cut out the seeds. Cut the feta into cubes.
  2. Finely chop the herbs. Beat the eggs and whisk well with a fork in a bowl, season with a little salt and pepper if necessary.
  3. Heat a pan with a little vegetable fat on medium heat, add the egg mixture and let it bubble briefly. Then pull the mixture apart to make the scrambled eggs. Turn down the temperature a little. Only add the feta when the scrambled eggs are almost ready. Mix in the feta just lightly so that it doesn`t completely disintegrate.
  4. When the scrambled eggs are ready, add the tomato pieces and briefly fold in slightly, just so that they take on heat.
  5. Sprinkle with the fresh herbs and serve.
  6. Good Appetite!
