Bring the milk and salt to the boil. Stir in semolina and leave to swell over low heat for 3-4 minutes.
Separate egg. Whisk the egg yolks and stir into the semolina. Add sweetener to taste. Beat egg whites until stiff and fold in. Arrange the semolina foam. Top with the blueberries and juice. Garnish with lemon balm if you like.
