- Stir butter until foamy - add sugar and yolk and lemon zest - mix with flour on a board to form a soft shortcrust pastry.
- Let rest in a cool place for about 1/2 hour
- Cut out any shapes - bake at approx. 180 degrees until light brown
- Put 2 biscuits with jam together - sprinkle with icing sugar. Get very soft.
