Knead the flour, butter, salt and milk into a dough. The butter should be lukewarm, otherwise the processing will be an ordeal. Depending on what kind of tart or quiche is being prepared, you can add other spices to the dough. But these should be dried.
After a firm dough has been kneaded, roll it out in a springform pan (or tart pan) greased with butter and prick with a fork. Chill again for about 20 minutes in the refrigerator, then top it as you like.
