Thaw the prawns. Cook the broccoli in salted boiling water for 3-5 minutes, rinse and drain well. Cut the carrots, peppers and onions into thin strips. Finely dice the garlic. Cut the leek into rings. Slice the mushrooms and wash the snow peas and drain well. Cut the shrimp along the back, remove the black intestinal thread in each case. Wash the prawns and pat dry.
Heat 2 tablespoons of oil in a pan and fry the prawns for 2-3 minutes while turning and remove. Heat the remaining oil. Fry the broccoli, carrots, onions, bell pepper, garlic, leek and mushrooms in it while stirring for 5-6 minutes. Mix in the sugar snap peas and sprouts, cook for 1-2 minutes. Pour in the broth, season with sugar, soy sauce and pepper. Add the prawns to the vegetable pan and heat again.
