Instructions

  1. For the decoration, cut out a column including the peel from the mango per glass, set aside. Peel the rest of the mango. Cut off the pulp along the stone, roughly dice. Puree with the blender. Put the puree through a fine sieve, cool.
  2. Cut half of the limes into as many slices as there are glasses. Score each disc once from the edge to the center. Later, stick the lime slices over the edge of the glass at the slit. Squeeze the remaining limes. Mix the mango pulp with the lime juice (to taste, with 6 glasses 3 - 4 tablespoons), distribute between the glasses. Pour the chilled sparkling wine on top. Stir once so that the pulp is properly distributed.
  3. Place the mango wedges, lime slices and lemon balm on the edges of the glass for decoration.
