Instructions

  1. Peel the cucumbers, cut in half lengthways, core and cut into crescent moons about 1 cm in size. Wash and core the peppers and cut into bite-sized cubes. Finely chop the onion.
  2. Heat the olive oil in a large saucepan and sauté the onions until translucent. Add cucumber and bell pepper and sauté over low heat and a pinch of salt for about 10-15 minutes. Add the tomatoes without the stalk and diced, mix well and simmer for about 10 minutes.
  3. Mix the minced meat, egg, salt, pepper, paprika and mustard well. Shape it into small or large balls, depending on your preference. Fry these in a pan in the hot clarified butter. They don`t need to be cooked through, it`s all about the toasted flavors. In the meantime, a vegetable stock should have formed in the pot and cover approx. 2/3 of the vegetables. If necessary, add tomato puree. Put the meatballs with the vegetables in the saucepan, fold in carefully and simmer gently for 10 minutes. Season with salt, freshly ground pepper and approx. 1 - 2 tablespoons of sugar.
  4. Before serving, add the finely chopped dill to the cucumber pot and do not boil any more.
  5. This tasty cucumber pot, which is also suitable for children, can be served on a plate with rice and sprinkled with fresh dill.
