Bring the water to a boil in a large saucepan with the vegetable stock, then add the peas, carrots and potato pieces. Boil the soup for about 30 minutes, season with salt.
Remove 2 - 3 ladles from the soup and puree with the blender. Add the puree to the soup again. Add the chopped parsley, the sausages and the diced bacon and just let it get hot.
